The Vulcan VP18-1M3ZN is a non-insulated electric cabinet that both proofs and holds, taking 18 sheet pans, with a full-size glass door and 2000 W at 120V.
The mode switch is what makes this cabinet worth more than a plain holding box. In proofing mode a 1/2 gallon water pan adds humidity at a low temperature so dough rises properly; in holding mode the same cabinet holds cooked product up to 190°F. A bakery or a scratch kitchen gets one footprint doing the morning's proofing and the afternoon's holding.
A blower and air tunnel distribute heat evenly through the stack, the tray slides are adjustable rather than fixed, and the glass door lets staff watch the dough without opening the cabinet. Structural components are 100%% stainless steel. Vulcan backs the heating elements for ten years on parts.
